Peter Canlis is Your Host. That phrase meant something; the restaurant's page still says:

In 1950, visionary Peter Canlis opened a Seattle restaurant “where Peter Canlis is your host.” From the start, he served the finest seafood and steak in America, allowing the food on the plate to speak for itself – no sauces.

I'll bet that moving stock between the restaurants was somewhat difficult.
